A Balinese cooking class in Ubud is one of the most joyful ways to spend a morning. Most begin at the local morning market — your guide navigating the chaos and explaining every ingredient, spice paste, and fresh offering. Back at a traditional open-sided bale (pavilion), you work through four or five dishes using stone mortars to grind fresh spice pastes, woks over coconut husks, and bamboo skewers for satay. Recipes are provided to take home. The class ends with lunch eating everything you've cooked. The smell of Balinese spices — lemongrass, galangal, turmeric — will stay with you long after you've left.
